Tomato and Pesto Pasta
Fresh sautéed tomatoes and pesto give this pasta recipe an Italian flair. Use store bought or homemade basil pesto. Or try other varieties like sundried tomato or arugula pesto.

Ingredients
- 8 ounces Ronco Angel Hair
- 3 tablespoons olive oil, divided
- 1-1/2 cups (4 ounces) sliced fresh mushrooms
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 3 ripe plum tomatoes, halved, seeded and sliced
- 8 ounces pesto, fresh or store bought
- Grated Parmesan cheese, optional
Directions
- Cook pasta according to package directions.
- Heat 2 tablespoons of oil in medium skillet, over medium heat. Add mushrooms, basil, salt and pepper. Cook 3 minutes until lightly brown. Add tomatoes; cook and stir for 30 seconds. Drizzle with remaining tablespoon of oil and remove from heat.
- Mix all ingredients, including pesto, with pasta. Serve with Parmesan cheese, if desired.
