Spaghetti Carbonara

Ingredients
- 1 box (13.25 oz) 100% whole grain spaghetti
- 1 onion, chopped
- 1 tsp olive oil
- 1/4 cup turkey bacon
- 1 cup chicken stock or broth
- Black pepper to taste
- 2 egg yolks
- 1/4 cup grated Parmesan cheese
- Parsley to taste, fresh or dried
Directions
- In a large skillet, cook onion in olive oil over medium heat until tender, or 3 to 5 minutes. Add bacon and cook for approximately 5 minutes. Stir in broth and simmer for 15 minutes. Season with black pepper.
- Meanwhile, cook pasta according to package instructions. Combine sauce and pasta in mixing bowl. Add egg yolks, Parmesan, parsley and gently toss. Serve immediately.
