Fettuccine with Ham and Mushrooms

Mushrooms and ham make a tasty match. In this pasta sauce, they are joined by roasted red pepper and white wine that add a spark to the fettuccine.

Serves 6

Ingredients
  • 16 ounces Ronco Fettuccine
  • 1/4 cup olive oil
  • 2 tablespoons chopped garlic
  • 1 pound ham, sliced into thin strips
  • 1/2 pound mushrooms, sliced
  • 1/4 cup chopped fresh basil
  • 1/4 cup diced roasted red pepper
  • 1/2 cup white wine
  • 1/2 cup chicken broth or consommé
  • 3/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

 

Directions
  1. Cook pasta according to package directions.
  2. Heat oil in a large skillet; add garlic, ham, mushrooms and fresh basil. Cook and stir for two minutes. Add cooked pasta and red pepper; toss to blend. Add wine and chicken broth; cook until it starts to simmer then add cheese.
  3. Stir gently to combine all ingredients. Season with salt and black pepper.
