California Pesto Primavera

Ronco Linguine

Serves 3

Ingredients
  • 12 ounces Ronco Linguine
  • 1/4 cup olive oil
  • 3/4 cup thinly sliced mushrooms
  • 1/4 cup minced scallions
  • 3/4 cup sun dried tomato strips
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons butter
  • 1 cup chopped fresh spinach leaves
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
Directions
    1. Cook pasta according to package directions. Reserve 1 cup pasta cooking water.
    2. Heat olive oil in large skillet over medium heat; cook and stir mushrooms and scallions, 4 minutes. Add sun dried tomatoes, pasta cooking water and lemon juice; simmer for 2 minutes.
    3. Add cooked pasta, spinach and butter to skillet.
    4. Season with salt and pepper to taste. Sprinkle with Parmesan cheese.
