Beef and Penne Stir Fry

Serves 4

Ingredients
  • 8 ounces Ronco Penne Rigate
  • 2 tablespoons oil
  • 1 pound beef flank or top round steak, cut into thin strips
  • 1 (9 ounces) package fresh or frozen snow peas (or sugar snaps)
  • 1 red bell pepper, cut into thin strips
  • 1/2 cup beef broth
Directions
    1. Cook pasta according to package directions.
    2. Heat oil in large skillet over medium-high heat. Add steak, half at a time, and stir fry for 3 minutes, or until lightly browned.
    3. Remove steak from skillet. Hold warm. Reduce heat to medium.
    4. Add snow peas and bell pepper. Stir-fry 2 minutes. Stir in beef broth. Bring to boil, stirring to loosen brown bits.
    5. Add pasta and steak. Toss to coat. Season to taste with salt and pepper.
